Palm oil is the default for most budget snack brands because it is cheap and shelf-stable, not because it is better. Our base is oats flour and urad dal, not maida. The frying method is the same as everyone else. What goes into the oil is not.
Soy protein isolate (SPI) is a highly processed extract used by snack brands to inflate the protein number on a nutrition label cheaply. It has a distinctly beany, bitter, and astringent flavour the kind that lingers in a way natural ingredients don't and its quite controversial as well. We get our protein from urad dal a whole ingredient that has been part of Indian cooking for centuries, with a flavour that belongs in food rather than one that needs to be engineered around. The difference isn't just what's on the label. It's what you actually taste. Our protein number comes from a real ingredient, not a processing shortcut.
Groundnut oil has a high smoke point, a neutral-to-clean flavour profile, and a significantly better fatty acid composition than palm oil. It is also one of the most traditional frying oils in Indian cooking it has been on the right side of the pantry for generations. Palm oil is used industrially because it is cheap and highly shelf-stable, not because it is a better oil. Groundnut oil costs us more. We use it anyway because the oil is the ingredient that touches every single chip.
